White Chocolate Funfetti Cookies

White Chocolate Funfetti Cookies mix boxed Funfetti cake mix with vegetable oil, eggs, and white chocolate chips to produce soft, colorful cookies with a moist, tender crumb. The presence of cake mix simplifies preparation and guarantees consistent texture with fun sprinkles embedded throughout. These cookies retain a pleasant chew and sweetness highlighted by bits of white chocolate.

Description

White Chocolate Funfetti Cookies are created by combining a boxed Funfetti cake mix with oil and eggs to form a batter that is then folded with white chocolate chips. The batter is dropped by spoonfuls onto lined cookie sheets and baked at moderate temperature until just set. The cookies appear slightly underbaked when removed from the oven, which helps maintain softness and chew after cooling.

These cookies exhibit a soft and tender texture with colorful sprinkles dispersed inside, paired with creamy white chocolate pockets. Their lightly sweet taste and playful appearance make them suitable for casual snacking or festive treats. The simplicity of using cake mix streamlines the process while delivering predictable results.

Once cooled, the cookies hold shape and can be stored in an airtight container to preserve softness. These are enjoyable on their own or served alongside milk or tea for a quick sweet bite.

Ingredients

Servings
  • 1 Funfetti Cake Mix box
  • 1/2 cup vegetable oil (I actually used grapeseed oil for this, so use what you have!)
  • 2 egg
  • 3/4 cup white chocolate chips

Instructions

  1. Preheat oven to 350 degrees.
  2. Combine cake mix, oil, and eggs together in a large bowl, mixing until smooth. Stir in white chocolate chips.
  3. Drop dough by rounded tablespoons onto cookie sheets lined with parchment paper. Bake in preheated oven for 10-12 minutes. Cookies won't look completely baked, but that's ok! Remove from oven and allow cookies to cool on the cookie sheet for 1-2 more additional minutes before transferring to a wire rack to cool completely.
  4. Store in an airtight container. Enjoy!
