White Chocolate Raspberry Cheesecake Cookies

These White Chocolate Raspberry Cheesecake Cookies combine a tender, slightly tangy cream cheese dough with raspberry muffin mix and white chocolate chips. The dough is chilled before baking to maintain shape and develop texture. The resulting cookies have golden edges with a soft center, balancing sweet white chocolate and tart raspberry flavors in a unique, chewy cookie form.

Description

The recipe begins by creaming together softened cream cheese, butter, shortening, and brown sugar, creating a smooth base with a subtle tang from the cream cheese. Eggs are incorporated one at a time to bind the dough. Raspberry muffin mix and all-purpose flour provide structure along with raspberry flavor and slight cakeyness.

White chocolate chips are folded in for sweetness and creamy pockets that contrast with the slight tartness of raspberry. Chilling the dough before scooping and baking helps the cookies maintain their shape and develop a desirable texture. Baking at 350°F until edges are golden ensures a tender yet cooked center.

Storing the dough in the refrigerator between baking batches maintains the right temperature for consistent cookie shape and bake. These cookies offer a balanced sweet and tangy taste suitable for snack time or dessert.
