Ingredients
- 1/2 small banana (50g)
- 1 Tbsp milk (15g)
- 1.5 tsp melted coconut oil
- 1/2 tsp vanilla extract
- 1/3 cup oats (27g) quick or rolled
- 2 Tbsp protein powder (15g) about 1/2 scoop - I used PEScience
- 2 tsp Truvia brown sugar
- 1 tsp baking powder
- 1/2 tsp cinnamon

Instructions
- Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
- Mash the banana with a fork. Mix in the milk, coconut oil and vanilla extract until well combined.
- To the same bowl, add the oats, protein powder, brown sugar, baking powder and cinnamon.
- Add the oat mixture to the prepared baking sheet. Bake for 9-11 minutes or until a toothpick inserted in the center comes out clean. Cookie will look soft and like it needs a little bit longer but it will continue to cook on the hot pan after you remove it from the oven. After 5-10 minutes transfer the cookie to a wire rack or plate and enjoy!
