Protein Peanut Butter Pie in a Jar (Single-Serve!)

This Peanut Butter Pie in a Jar is the most heavenly single serve snack or night cap! It has a brown sugary buttery crust with a sweet and creamy peanut butter pie filling, all chilled to perfection and topped with some creamy cool whip! Healthy, lightened up and seriously so good!!

Ingredients

Crust:

  • 2 Tbsp quick oats (10g)
  • 1 Tbsp brown sugar (12g) I used Swerve
  • 1/2 Tbsp light butter (7g) melted

Peanut Butter Filling:

  • 1/4 cup light cool whip (18g) can sub for dairy-free
  • 2 Tbsp plain nonfat Greek yogurt (30g) can sub dairy-free Greek yogurt
  • 2 Tbsp peanut butter powder (16g)
  • 1 tsp sweetener more to taste - you can use Swerve, monk fruit, sugar, etc.
  • 1/2 tsp vanilla extract
  • Pinch of salt
  • light Cool Whip for topping, optional

Instructions

  1. Combine oats, brown sugar and butter together well. Spoon into a small jar, pressing down and along the sides.
  2. Mix together the cool whip, yogurt, peanut butter powder, sweetener, vanilla and salt until well combined.
  3. Spoon over top of crust and smooth the top out. Top with additional cool whip, if desired.
  4. Freeze for 1 hour or refrigerate for 3-4 hours. Defrost for 10 minutes before serving.

Notes

  • If you want to make multiple in advance, store jars in an airtight container in the fridge for up to a week or in the freezer for up to 3 months. If storing in the freezer, let defrost for 10 minutes before serving.
