Instructions
- Unwrap 35 pieces of White Rabbit candies (1 small bag 6.3 oz) and put them in the bowl. Don't worry about the thin rice paper, it is edible and will melt.
- After that, pour ½ cup of milk into the bowl with the candies. Then, put them in the microwave for around 1.5 minutes and until all the candies melt. (*I suggest putting it for 30 seconds, then stir and mix it. Repeat this step until the candy melts. Watch it very carefully because it may overflow.) Or, you can heat them up over the stove with a small fire until all the candies melt.
- Let the candy mixture cool off before adding it into the cream.
- In a mixing bowl, pour 1 cup of heavy whipping cream and use an electric hand mixer to whip the cream. Until the cream is thick, but don't over whip it.
- Next, add the melted candy mixture from step 3 into the whipped cream.
- Mix it well.
- Pour the mixture into a container and level it off. Cover it with a plastic wrap. Then, freeze it for at least 6-8 hours. The best result is to freeze it overnight.
- Then, unwrap the plastic wrap and scoop the ice cream out. The best is to wait for 1-2 minutes because it is easier to scoop it out.
Notes
- Cooking tips for White Rabbit ice cream:
- Melt the white rabbit candies with milk in the microwave for around 1.5 minutes depending on your microwave power. I suggest to do 30 seconds first, then stir it and add more seconds until all candies are melted. Make sure to watch it carefully when melting the candies because you can stop the microwave if you see it’s overflowing.
- Let the candy mixture cool off before adding it into the cream.
- Use an electric hand mixer to whip the cream until it’s thick, but don’t over whipped it. After that, mix the melted candy mixture and whipped cream. Then, freeze it for 6-8 hours.
- Depends on how sweet the ice cream you want. You can add more white rabbit candies if you want sweeter. (I used 35 pieces, it’s a small 6.3 oz bag.)
