Ingredients

  • 3/4 cup whole wheat flour
  • 3/4 cup self rising flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 cup sugar
  • 1/2 cup packed brown sugar
  • 1 teaspoon vanilla
  • 1/4 cup brown butter
  • 1/4 cup applesauce
  • 2 large eggs
  • 2 very ripe bananas mashed
  • 1/4 cup chopped walnuts optional

Instructions

  1. Preheat oven to 325 degrees. Line a muffin pan with 12 paper liners and set aside.
  2. In a large bowl, whisk all dry ingredients together, including sugars. Make a well in the middle of the dry ingredients. Pour remaining wet ingredients into the well of the flour. Slowly stir to incorporate.
  3. Spoon batter into prepared tins and top with chopped walnuts, if desired. Bake 15 minutes or until toothpick comes out clean after inserted. Serve warm with butter.
