Description

The dough combines mostly whole wheat flour with some plain flour and baking powder for slight leavening. Salt is added for taste, and vegetable oil ensures tenderness. Warm water is incorporated gradually until a smooth dough forms, which is then divided and rolled into thin circles about 22 cm in diameter.

Cooking takes place in a heavy-based frying pan heated well beforehand without oil, allowing the tortillas to puff up and develop bubbles. Each tortilla is cooked about two minutes per side. For a bit of smoky charring, tortillas can be held over an open flame briefly if using a gas stovetop.

The resulting tortillas are suitable for wraps or accompaniment to meals, providing a heartier alternative to white flour tortillas. They store well and can be reheated as needed.

  • 170 g whole wheat flour
  • 70 g plain flour
  • 0.5 teaspoon baking powder
  • 1 pinch salt sea salt
  • 2 tablespoon vegetable oil
  • 150 ml water boiled and allowed to cool, warm

Instructions

  1. Combine 70 g Plain flour, 170 g Whole wheat flour, 0.5 teaspoon Baking powder and 1 pinch Sea salt in a large bowl.
  2. Pour in 2 tablespoon Vegetable oil and using your hands, mix until you get a crumbly mixture.
  3. Add 150 ml Warm water a little at a time. continue mixing until a smooth dough is formed.
  4. Divide into 5 equal pieces. On a floured surface, roll each piece of dough into a circle around 22cm/9 inch in diameter.
  5. Heat a frying pan (no oil) until hot - this will take 4-5 minutes. Cook each tortilla for 2 minutes each side.

Notes

  • Heat your pan thoroughly for 4–5 minutes before cooking tortillas to encourage puffing and bubbles.
  • Use a heavy-based pan to help cook tortillas evenly and achieve good texture.
  • Cooking a large batch will increase total cooking time unless multiple pans are used.
  • If desired, quickly char the cooked tortillas over a gas flame for about 30 seconds per side for extra flavor.
