  • 2 pounds ground beef grass fed
  • 1/4 cup onion chopped finely
  • 1 egg beaten
  • 2 tbsp garlic minced
  • 2 tbsp almond protein powder brand Octonuts
  • pinch salt sea salt
  • 3/4 tsp black pepper ground
  • 1 tbsp olive oil
  • 2 tsp oregano
  • 1/2 tsp basil
  • 2 tbsp parsley chopped, freshly
  • 2 cups marinara sauce

Instructions

  1. First, preheat oven to 375 degrees Fahrenheit and line a large rimmed baking sheet with parchment paper.
  2. Next, add all ingredients except marinara sauce to a large mixing bowl.  Use your hands to combine mixture until uniform.
  3. Form meat mixture into 1.5 inch meatballs.  Then, place meatballs 1 inch from each other on baking sheet.
  4. Next, bake for 18 to 20 minutes or until meatballs are cooked through, reaching an internal temperature of 165 degrees Fahrenheit. 
  5. Then, add marinara to a large casserole dish.  Place cooked meatballs on top and bake for 20 minutes.
  6. Finally, remove from oven and serve with veggie noodles or cauliflower rice.

Notes

  • Substitute almond protein powder with 2 tablespoons almond flour plus 1 tablespoon tapioca flour if needed.
  • Check meatball doneness with a meat thermometer; safe internal temperature is 165°F.
  • Store leftovers in the refrigerator for up to 3 days.
