Whole30 Swedish Meatballs

These Whole30 Swedish Meatballs are made with ground beef, diced onions, almond flour, and coconut aminos for seasoning. They are browned and then simmered in a creamy gravy made from beef broth, coconut cream, and spices, thickened with tapioca flour. The result is tender meatballs with a rich, slightly tangy sauce that can be served over mashed potatoes for a comforting meal.

Description

Get the Recipe: Whole30 Swedish Meatballs features ground beef combined with finely diced onions, almond flour, and egg to create tender meatballs. The pan-fried meatballs develop a browned crust before being simmered in a creamy gravy made from beef broth, coconut cream, and mustard, infused with coconut aminos and garlic powder for depth. The gravy is thickened with tapioca flour for a smooth texture.

The meatballs have a balanced flavor with savory notes from the beef and a subtle sweetness and creaminess from the coconut cream. Cooking the onions first in ghee adds a gentle sweetness and moisture to the meat mixture. The gravy simmers gently to meld the flavors and thicken nicely.

This dish is ideal served over mashed potatoes, allowing the rich gravy to soak into the sides. Leftovers can be stored refrigerated and reheated gently in a skillet to maintain their texture and flavor.

To adjust the gravy consistency, additional tapioca flour can be added slowly until desired thickness is reached. Draining excess grease before adding the gravy helps keep the sauce smooth and not oily.

Ingredients

Servings

Meatballs

  • ½ cup white onion diced finely
  • 1 tbsp ghee or grass fed butter
  • 1 pound ground beef
  • 1 egg
  • ¼ cup almond flour
  • 1 tbsp coconut aminos
  • ¼ tsp black pepper ground
  • ¼ tsp salt sea salt

Gravy

  • 1 ½ cups beef broth
  • cup coconut cream
  • 1 tbsp tapioca flour
  • 1 tbsp ground mustard
  • ½ tsp garlic powder
  • 1 tsp coconut aminos

Instructions

  1. First, add ghee and diced onion into a larges skillet over medium heat. Cook for 3 to 4 minutes or until tender. Then, remove onions and add to a large mixing bowl.
  2. Add remaining meatball ingredients to the mixing bowl with onions. Use your hands to combine.
  3. Next, form 1 to 1.5 inch meatballs. Place each meatball in the same skillet the onions were cooked in.
  4. Cook on low medium heat for 2 to 3 minutes on each side. Cook until browned on all sides. Drain excess grease from pan.
  5. Next, combine all gravy ingredients in a mixing bowl. Pour gravy over meatballs in skillet.
  6. After that, bring to a slight boil and cook for 10 minutes, until gravy has thickened. If needed, add just a teaspoon more tapioca flour to thicken gravy.
  7. Finally, serve over mashed potatoes if desired. Drizzle extra gravy on top!

Notes

  • Drain excess grease from the pan before adding gravy to prevent an oily sauce.
  • Use additional tapioca flour a teaspoon at a time to thicken the gravy if needed.
  • Store leftovers in an airtight container in the refrigerator for up to three days.
  • Reheat meatballs and gravy gently in a skillet over low heat until warmed through.
