Whole30 Taco Casserole
Description
The Whole30 Taco Casserole features a sauce made from soaked raw cashews blended with water, lime juice, salt, cumin, smoked paprika, cayenne, and chili powder to create a luscious, spiced creaminess. Ground beef is sautéed with onions until browned and seasoned with salt and pepper, then combined in a casserole with cubed sweet potatoes tossed in avocado oil.
Baked in a greased dish at 350°F, the casserole offers a rich, creamy texture from the cashew sauce, balanced by the natural sweetness and softness of sweet potatoes and the savory, crumbly ground beef. The taco-inspired seasoning brings warmth and depth, while optional toppings like guacamole, salsa, and shredded lettuce add fresh and tangy notes for serving.
The dish is built step-by-step, beginning with soaking cashews ahead of time to ensure a smooth sauce, making it suitable for planned meal preparation. The casserole can be baked after assembling and is intended to deliver a balanced and satisfying meal adhering to Whole30 principles.
