Wood Plank Salmon in a Pizza Oven
Description
The Wood Plank Salmon in a Pizza Oven features salmon fillets generously coated with a layered seafood seasoning, including brown sugar, paprika, thyme, rosemary, and garlic powder, enhanced by aromatic spices like cumin and marjoram. Topped with garlic and lemon slices, the salmon is placed skin-side down on a dry wood plank and cooked evenly by rotating in a pizza oven heated between 450 and 500 degrees Fahrenheit. This method yields tender, flavorful fish with a slight smoky infusion from the wood plank, cooked to varying degrees from medium-rare to well done according to temperature preferences.
The salmon pairs well as a main dish accompanied by fresh vegetables or light sides, perfect for a unique grilling experience at home using a pizza oven. The wood plank adds both flavor and helps regulate the cooking process, preventing the fish from direct flame contact.
Carefully monitoring the salmon's temperature and rotating the fillet ensures even cooking and desired doneness, ranging from 115°F for medium rare to 145°F for well done. The recipe highlights the importance of preheating the pizza oven and using the thick part of the fish toward the fire first for consistent results.
