Description

This cheesecake has a crust made by mixing graham cracker crumbs with sugar and melted butter, pressed into a dish. The filling consists of cream cheese blended with sugar, lemon juice, vanilla, and dissolved lemon gelatin mix, combined with whipped heavy cream to create a light texture.

Once the filling is spread over the crust, it’s chilled to set before adding a topping layer of the reserved graham cracker crumb mixture. This creates a finished dessert with a delicate balance of creamy, tangy filling and a crunchy crust and topping.

Crust Ingredients:

  • 3 cups graham cracker crumbs (about 3 sleeves)
  • 1/2 cup sugar
  • 8 ounces butter (1 stick, melted)

Filling Ingredients:

  • 6 ounces lemon gelatin mix
  • 2 cups water boiling
  • 24 ounces cream cheese (3 x 8oz. packages of cream cheese, softened)
  • 1 1/2 cups sugar
  • 1/3 cup lemon juice
  • 1 teaspoon vanilla
  • 2 1/4 cups heavy whipping cream

Instructions

  1. Directions:
  2. Boil the water in a saucepan, remove from heat.
  3. Add the lemon Jello and stir until dissolved, set aside.
  4. Place graham crackers in a blender or food processor and process to fine crumbs.
  5. Melt the stick of butter in the microwave.
  6. Place the graham cracker crumbs in a 9 X 13 dish and stir in the 1/2 cup of sugar.
  7. Pour the melted butter into the crumbs and stir until well coated.
  8. Press 1/2 the crumbs evenly in the 9 X 13 dish.
  9. In the mixing bowl of a stand mixer, pour the heavy whipping cream in the bowl and whip until stiff peaks form. (If you have 2 mixing bowls, then place this bowl in the refrigerator - if not, place the whipped cream in another bowl, and place the whipped cream in the refrigerator).
  10. In the mixing bowl, add the cream cheese, sugar, lemon juice and vanilla. Mix until well blended.
  11. Add the lemon Jello and mix well.
  12. Blend in the whipped cream just until mixed.
  13. Spread the filling in the 9 X 13 dish evenly and let set up for 1 hour in the refrigerator.
  14. Sprinkle with remaining graham cracker crumbs.
  15. Chill at least 4 hours, or overnight for best results.
  16. Serve and Enjoy!

Notes

  • Allow the filling to set in the refrigerator for about one hour until firm before adding the reserved graham cracker topping.
  • A thinner filling is normal initially since it will thicken completely after chilling.
