Yellow Cake Mix Cookies
Description
This recipe transforms yellow cake mix into cookie dough by mixing it thoroughly with eggs and vegetable oil. The resulting dough is thick and enriched with either chocolate chip cookies or toppings folded in before baking at 350°F. Baking for about nine minutes yields cookies that are slightly underdone for a plush, soft consistency, with an option to bake a bit longer for crispier edges.
The cookies have a fluffy texture, different from traditional cookies, as the cake mix base adds a tender crumb. They work well as a sweet snack or dessert and come together quickly with minimal ingredients.
The recipe suggests using Duncan Hines yellow cake mix, found to provide the best flavor and texture among tested brands. Vegan variations can be made by substituting eggs with flax eggs or commercial egg replacers. Popular toppings include chocolate chips or sprinkles, but other creative options are encouraged.
Ingredients
- 15 oz yellow cake mix see notes for best brand
- 2 egg large
- ⅓ cup vegetable oil
- ⅓ cup Chocolate Chip Cookies see notes for other toppings
Instructions
- Preheat the oven to 350°F
- Add cake mix, eggs, and vegetable oil to a large mixing bowl. Then, using a spatula, stand mixer (paddle attachment) or a hand mixer, combine well. Note that the cookie dough will be quite thick.
- Then, fold in your chocolate chip cookies (or other toppings).
- Use a cookie scoop (or tablespoon) to measure and place cookies on a baking sheet, evenly spaced, with at least 1-2 inches between the cookies. This is important since the cookies will spread out when they bake. P.S., I've linked my favorite cookie scoop and it's literally never failed me!
- Bake for ~9 minutes until they're brown. You want the cookies to look slightly underdone in order to get the perfect, fluffy cookie consistency. If you like your cookies more crisp, bake for an extra minute.
- Serve hot!
Notes
- Duncan Hines yellow cake mix is recommended for best cookie texture and flavor.
- Vegan options can be achieved by replacing eggs with flax eggs or commercial vegan egg substitutes.
- You can customize toppings beyond chocolate chips, such as sprinkles or other mix-ins.
