Yogurt Berries Popsicles

These Yogurt Berries Popsicles blend plain Greek yogurt with sweetener and coffee syrup or vanilla extract, layered with fresh blueberries and raspberries. The combination freezes into creamy, fruity ice pops with optional granola topping for crunch. They provide a refreshing, lightly sweet treat with the tang of yogurt and natural berry flavors.

Description

The preparation involves mixing Greek yogurt with no-calorie sweetener or honey as an alternative, along with a tablespoon of coffee syrup or vanilla extract to add subtle flavor. Half of this mixture is poured into popsicle molds, then whole berries are added and pushed into the mold base. After a brief partial freeze to firm up, a blended mixture of the remaining yogurt and berries is layered on top to create a smooth, colorful filling.

The optional granola topping adds textural variety and crunch once frozen. The popsicles require several hours of freezing to solidify completely. The tartness of Greek yogurt balances nicely with the sweetness of berries and syrup, creating a creamy frozen dessert with layers of fruity flavor and texture.

Using honey instead of sweetener changes calorie content, so note that when considering nutrition. These popsicles introduce subtle coffee or vanilla undertones depending on the syrup used.

Ingredients

Servings
  • 16 oz Greek yogurt plain, non-fat
  • 2 no-calorie sweetener substitute with 3 tablespoons of honey if preferred. see note below, like Truvia
  • 1 Tablespoon coffee syrup substitute with 1 Teaspoon of vanilla extract if preferred, sugar free, french vanilla
  • 4 oz blueberries
  • 4 oz raspberry
  • granola optional

Instructions

  1. In a medium bowl, add the Greek yogurt, sweetener, vanilla syrup or vanilla extract if using any. Mix well with a spoon.
  2. Add half of the yogurt mixture to the ice pop molds. Add a few whole berries in each mold and push to the bottom of the mold with a toothpick.
  3. Freeze the pops for about 15 minutes just to harden them up a bit.
  4. Meanwhile, in a blender puree the remaining of the Greek yogurt and the berries. Add the mix to the ice pop molds and top with granola if using any.
  5. Freeze at least 4 – 5 hours.

Notes

  • If using honey as the sweetener, be aware it adds calories and sugars to the popsicles.
  • Layering whole and blended berries gives contrasting textures in the frozen pops.
  • Add granola on top before final freezing to incorporate a crunchy element if desired.
