Young Zhou Fried Rice - Yangzhou Fried Rice
Description
This fried rice utilizes cold, day-old rice to ensure grains remain separate when stir-fried. Ingredients like diced Chinese ham (or char siu), shrimp, green peas, and carrots provide a variety of flavors and textures, combined with a light seasoning of soy sauce, salt, and white pepper. Eggs are cooked directly in the wok and mixed quickly with the rice for added richness.
The cooking method involves individually cooking the protein and vegetables before mixing everything with rice and seasonings in the wok. Green onions added at the end contribute freshness and color. The quick high-heat stir-fry locks in flavor and achieves slightly crisp grains.
This dish is typically served hot as a main or side and makes excellent use of leftover rice and bits of protein and vegetables. It can be prepared in a wok or nonstick skillet depending on availability.
Ingredients
- 6 cups white rice note 1, leftover
- 2 egg beaten, large
- 2 tbsp. vegetable oil
- 1/4 cup Chinese ham or you can use char siu, diced
- 8-10 Shrimp deveined, shelled
- 1/2 cup green peas
- 1/2 cup carrot diced
- Pinch of salt to taste
- 1/4 tsp. ground white pepper
- 1 tbsp. soy sauce light
- 2 green onions , finely chopped
Instructions
- Slightly separate the grains of rice via slightly pressing the rice by a rice scoop. This step is optional but highly recommended for beginners.
Prepare peas and carrots
- Heat up around 1 tablespoon of cooking oil in wok and fry green beans and diced carrots until softened.
- Or blanch the peas and carrots in boiling water for 2 miuntes. Transfer out and drain completely.
Fry the rice
- Heat up 1 tablespoon of cooking oil in a wok or a nonstick skillet (Note 2) and fry shrimp until slightly seared. Transfer out.
- Play rice in wok and dig a small hole in center, add the remaining 1 tablespoon of cooking oil and pour in beaten egg . Give a quick stir so the egg and rice can be mixed well quickly.
- Add green beans, carrots, ham and shrimp, light soy sauce, sprinkle pinch of salt and white pepper. Give everything a big stir-fry and mix well. Then add green onion and fry for another 30 seconds.
- Serve hot!
Notes
- When steaming rice for fried rice, slightly reduce water to produce firmer grains suited for stir-frying.
- A nonstick skillet is recommended for new cooks without experience using a wok.
