Yu Choy

Yu choy, a leafy green vegetable, is blanched briefly to maintain its crisp-tender texture and bright color. It is then tossed in a simple yet savory sauce made of garlic, oyster sauce, soy sauce, sesame oil, and neutral cooking oil. The garlic-infused oil and umami-rich seasonings enhance the fresh vegetable's natural flavor, creating a subtly fragrant side dish served immediately while warm and vibrant.

Description

This Yu Choy recipe highlights the tender, clean taste of the vegetable through quick blanching to preserve its natural crunch and color. The accompanying sauce is made by gently infusing garlic in neutral oil, then combining it with oyster sauce, soy sauce, and sesame oil, balancing salty and nutty flavors. Heating the sauce until it simmers releases the aroma before drizzling over the drained greens.

The dish delivers a lightly seasoned, fresh vegetable side that pairs well with other dishes in an Asian-inspired meal. The brief blanch and warm sauce coating keep texture and flavor lively. Serving immediately ensures the best taste and brightness.
