Zaatar Lamb
Report
Zaatar Lamb is a wonderful pairing, make no mistake. Lamb is my favourite meat and I'm always searching for combinations that surprise and delight. This is such a simple way to serve the meat, alongside this celebrated Middle Eastern spice mix.

Ingredients
- 2.2 lb lamb chops
- 1 lemon (juice of)
- 1 garlic clove (crushed into a paste)
- 1/2 cup olive oil
- salt & pepper
- 2 tbsp za'atar
- 2 tbsp fresh mint leaves
Onion & Sumac Salad
- 1 bowl Sumac Onions (see my recipe)

Instructions
- Place all the ingredients into a plastic bag and jostle around to combine everything.
- Seal the bag and marinate in the fridge between 1-24 hours.
- Heat a BBQ or oven broiler/grill until hot.
- Grill the chops for 3-4 minutes per side until lightly charred but still pink in the middle. Leave to rest for 2-3 minutes then serve hot.
- If you're making the Sumac Onions (see link in recipe), serve the chops on a large platter with the onion on the side.
