Description

The Zebra Popcorn Recipe starts with plain popped popcorn spread on a baking sheet and kept warm while a caramel sauce is prepared. The caramel combines brown sugar, light corn syrup, butter, and salt, boiled for five minutes without stirring to develop a glossy texture. After removing from heat, baking soda and vanilla are stirred in to lighten the caramel.

This caramel is poured over the warm popcorn and stirred to coat as evenly as possible, then baked in a low oven for 60 minutes with stirring every 15 minutes to ensure crispness. Once cool and broken into pieces, the popcorn is decorated by drizzling melted white and dark chocolate almond bark in layers, creating the characteristic zebra stripes.

  • 10 cups Popcorn popped plain
  • 1 ½ cups brown sugar packed
  • 3/4 cup light corn syrup
  • 3/4 cup butter
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 2 ounces white chocolate almond bark melted
  • 2 ounces chocolate almond bark melted

Instructions

  1. Grease a large rimmed baking sheet or pan with cooking spray or line with a silicone baking mat.
  2. Preheat oven to 225F.
  3. Put popcorn on baking sheet, and place in the oven while you make the caramel.
  4. Add brown sugar, corn syrup, butter, and salt to a large, heavy saucepan.
  5. Bring the mixture to a boil, stirring constantly.
  6. Let it boil 5 minutes without stirring.
  7. Remove from heat.
  8. Add baking soda and vanilla, and stir in to combine.
  9. Remove popcorn from oven, and pour caramel over warm popcorn, tossing to coat. The popcorn may not be completely coated, and that's ok.
  10. Bake for 60 minutes, stirring every 15 minutes.
  11. Remove from oven and let cool in a single layer on the baking sheet.
  12. Break apart before drizzling with chocolate.
  13. Once the popcorn has cooled and been broken apart, drizzle with chocolate.
  14. Drizzle melted white chocolate over the top.
  15. Let the chocolate set up before serving.
