Zucchini Cake
Description
Zucchini Cake combines all-purpose flour, baking soda, salt, and cinnamon with eggs, buttermilk, vegetable oil, sugar, and vanilla extract to form a batter enriched by grated zucchini, coconut flakes, chopped walnuts, and crushed pineapple. Baking this mixture at 350°F in a greased and floured 9×13 pan produces a moist, flavorful cake that balances spice and sweetness with the moisture from zucchini and pineapple. The coconut and walnuts add texture and subtle tropical and nutty elements.
The cake is baked until fully cooked through, indicated by a clean toothpick test, then cooled completely before frosting, allowing the layers of flavor and moisture to set for a tender crumb. This cake is suitable for serving as a snack or dessert.
