Zucchini Casserole

Zucchini Casserole combines grated, towel-dried zucchini with Bisquick, onions, eggs, Parmesan, and seasoning, baked until golden and set. The texture is moist but firm, with a mild zucchini flavor complemented by cheese and herbs. This savory casserole is portioned into squares and makes a rustic side dish or light main course.

Description

In this casserole, shredded zucchini is squeezed dry to remove excess moisture and combined with Bisquick mix, minced onion, eggs, grated Parmesan, olive oil, and seasonings including salt, pepper, and parsley. The mixture is blended thoroughly and poured into a greased baking dish. Baking at 350°F for about 45 to 50 minutes yields a golden brown crust with a firm interior that holds together when sliced.

The dish offers a tender texture with savory notes from Parmesan and herbs, balancing the zucchini's mild flavor. It is cut into 12 squares for serving. The casserole is suitable as a vegetable side or a vegetarian entree option.

The recipe notes a homemade Bisquick substitute and options for vegetarian Parmesan if avoiding rennet. This flexibility allows cooks to adapt the dish to dietary preferences while retaining its structure and taste.
