Zucchini Oat Chocolate Chip Cookies

These zucchini oat chocolate chip cookies are a twist on the traditional cookie recipe and are absolutely delicious! Cookies are the ultimate comfort food that we all love and adore and after trying these, I bet you won't be able to just have one!!

Ingredients

  • 1 1/2 cups flour
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup oats
  • 1/2 cup butter softened
  • 1/2 cup sugar
  • 1/3 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla
  • 1 1/2 cups zucchini shredded
  • 1 cups chocolate chips

Instructions

  1. Preheat oven to 350. In a medium bowl whisk together flour, cinnamon, baking soda, oats, and salt.
  2. In a large bowl cream butter and sugars until light and fluffy. Add egg, vanilla, and zucchini and mix well. Add dry ingredients to wet ingredients and mix until incorporated. Fold in the chocolate chips.
  3. Drop spoonfuls of cookie dough onto a lightly greased cookie sheet at least 2 inches apart. Bake for 12-14 minutes until golden brown. Allow cooling 10 minutes on the baking sheet before transferring to a cooling rack or sheet of parchment or wax paper to finish cooling completely.
