Zucchini Patties
Description
This Zucchini Patties recipe combines grated zucchini that has been drained to remove excess moisture with chopped onion, Parmesan cheese, flour, eggs, mayonnaise, and flavorful oregano, salt, and pepper. This mixture binds into a batter that can be pan-fried in olive oil until the patties develop a golden-brown crust on both sides, adding crispness to contrast the soft interior.
The cheese adds a savory note and helps with browning, while the eggs and mayonnaise contribute to moisture retention and tenderness. The result is a slightly crispy, flavorful patty with a tender and moist center, making use of fresh zucchini in an approachable way.
These patties are served hot from the pan and can complement a variety of meals or stand alone as a light snack. Their simplicity highlights the zucchini's mild flavor and finely balanced herbs.
Leftover patties keep well refrigerated for several days and can be frozen once cooked. Reheating options include oven, microwave, or pan to maintain texture.
