Zucchini Pizza Boats

Ingredients

  • 4 zucchini medium
  • 1 tablespoon olive oil
  • 1/2 teaspoon kosher salt
  • 1 cup pizza sauce
  • 1 1/2 cups mozzarella cheese shredded
  • 1 teaspoon Italian seasoning
  • 1/4 cup Parmesan Cheese grated
  • 1/2 cup pepperoni mini slices
  • 2 tablespoons basil optional, chopped, fresh

Instructions

  1. Preheat the oven to 400°F. Line a baking sheet with parchment paper.
  2. Cut each zucchini in half lengthwise. Use a spoon to scoop out the inner flesh, leaving a 1/4-inch thick wall. Arrange the zucchini on the baking sheet, cut side up. Drizzle with olive oil and sprinkle with kosher salt.
  3. Spoon pizza sauce into each zucchini half. Sprinkle with shredded mozzarella cheese, Italian seasoning, and grated Parmesan cheese. Top with mini pepperoni slices.
  4. Bake for 15-20 minutes, until the cheese is melted and bubbly, and the zucchini is tender. If desired, broil for an additional 2 minutes to brown the cheese.
  5. Remove from the oven and sprinkle with chopped fresh basil, if using. Serve immediately.
