Zucchini Slice
Description
Zucchini Slice is a savory baked dish featuring grated zucchini, onion, garlic, and finely cubed bacon mixed with Gouda and Cheddar cheeses. Eggs and flour with baking powder bind the mixture, enriched by chives, vegetable oil, and simple seasonings. The batter is thick and poured into a greased ceramic quiche dish then baked until golden brown and set, yielding a slice with a firm yet tender texture, accented by the smoky bacon and mild cheeses.
The grated zucchini and onion provide moisture and softness, while the cheese adds richness and depth. The eggs and flour create a sturdy structure, allowing it to hold slices well. The meat inclusion enhances flavor complexity and adds texture contrast.
Remove seeds from very large zucchinis to prevent excess moisture causing sogginess. This dish can be served warm or at room temperature, making it a versatile option for a main meal, snack, or accompaniment.
Adjust salt and pepper levels to taste. Baking until the eggs are fully set ensures the correct sliceable consistency.
