Description

The 10-Minute Creamy Chipotle Chicken Ranch Dip blends shredded rotisserie chicken with a mix of Greek yogurt, cream cheese, ranch seasoning, honey, and finely chopped chipotle pepper in adobo sauce. This base offers a creamy, tangy, and smoky flavor with a subtle sweetness from the honey and heat from the chipotle.

The dip is partially mixed with shredded Mexican cheese, transferred to a small baking dish, topped with remaining cheese, and heated in an air fryer or oven until the cheese melts and the dip is warmed through. This cooking method produces a bubbly, cheesy topping and integrates the flavors thoroughly.

Ingredients

  • 1/4 cup Greek yogurt plain, nonfat, 60g
  • 1 oz. cream cheese softened, reduced-fat, 30g
  • 1 tsp ranch seasoning mix
  • 3/4 tsp honey
  • 1/2 cup rotisserie chicken breast cooked & shredded, heaping, 70g
  • 1 chipotle pepper in adobo sauce finely chopped
  • 1/4 cup Mexican shredded cheese 2%, 28g

Instructions

  1. Preheat the air fryer (or oven) to 375 degrees F. 
  2. In a bowl, mix together the yogurt, cream cheese, ranch seasoning mix, honey and chopped chipotle pepper. Add salt and pepper if desired. Then stir in the chicken. 
  3. Stir in half of the shredded cheese. Then transfer chicken mixture to a small 4-oz. dish (grease first). Sprinkle the remaining cheese over top. 
  4. Add to the air fryer and cook for 5 minutes or until it’s warmed through and the cheese is melted. (If cooking in the oven, cook for 10-15 minutes or until hot and bubbly. 
  5. Serve with tortilla chips, over toast, with roasted potatoes, rice or side of choice. You can also serve in a wrap! To keep lower carb, serve with baby peppers, baby carrots, over a bed of greens or in a lettuce wrap.
