10-Minute Pesto Shrimp

This 10-Minute Pesto Shrimp recipe cooks peeled, deveined shrimp briefly with cherry tomatoes in olive oil and salt, then finishes by stirring in basil pesto. The result is a quick, savory dish with tender shrimp coated in flavorful pesto and softened tomatoes. It is served immediately to preserve the shrimp's texture and freshness.

Description

The dish starts by heating olive oil in a large nonstick skillet over medium-high heat, followed by adding shrimp and cherry tomatoes with a pinch of salt. The shrimp cook as they are stirred for about four minutes until almost opaque, while the tomatoes soften slightly. Lowering the heat to medium-low allows the addition of basil pesto sauce, which is stirred in and cooked for about one more minute until the shrimp are fully cooked through and coated evenly with the pesto. The combination highlights bright herbaceous notes from the basil and earthy richness from the olive oil. The tomatoes add a slight sweetness and textural contrast. It is plated promptly with any extra sauce spooned on top to retain moisture and flavor.

Ingredients

Servings
  • 1 tablespoon olive oil
  • 1 pound Shrimp peeled and deveined; 31-40 pieces per pound, large
  • ½ cup cherry tomato
  • Pinch salt
  • ¼ cup basil pesto sauce

Instructions

  1. In a large (12-inch) nonstick skillet, heat the olive oil over medium-high heat. Add the shrimp and tomatoes with a pinch of salt.
  2. Cook, stirring often, until the shrimp are almost cooked through, about 4 minutes.
  3. Reduce the heat to medium-low. Stir in the pesto sauce and cook, stirring, until the shrimp are fully cooked and opaque, about one more minute.
  4. Divide the shrimp and tomatoes between two plates. Use a rubber spatula to scrape any remaining sauce from the pan and pour it on the shrimp. Serve immediately.

Notes

  • Using store-bought pesto is acceptable, though fresh-made offers superior flavor; choose high-quality olive oil–based pesto if using pre-made.
  • For fully cooked tomatoes, sauté them a minute before adding the shrimp.
  • Store leftovers in a shallow, airtight container in the fridge up to three days.
  • Reheat gently at 50% microwave power or serve cold as a topping for salads.
