Description

The 15-Minute Cashew Cheese uses soaked cashews blended with olive oil, lemon juice, apple cider vinegar, salt, nutritional yeast, black pepper, and fresh chives to create a dense, spreadable cheese. The nuts provide a creamy base, while the acid and yeast contribute tang and umami. It can be processed to a smooth consistency and adjusted with extra oil or water for thinner textures.

This cheese works well as a dip for crackers, chips, or vegetable sticks, and can also be used as a creamy pasta sauce. Refrigerating it firms the texture, making it sliceable.

To prepare, soak cashews overnight or for 30 minutes in hot water if time-limited. Store the cheese refrigerated in an airtight container for up to five days to maintain freshness.

  • 1 cup cashew nuts soaked overnight, see notes, raw
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tbsp apple cider vinegar
  • ½ tsp salt
  • ¼ cup chive fresh
  • 3 tbsp nutritional yeast
  • ¼ tsp black pepper ground

Instructions

  1. Place all ingredients in a food processor.
  2. Blend until smooth. You may need to scrape the sides a few times to remove any un-blended bits.
  3. Adjust the salt and pepper to taste.
  4. The resulting cheese will be very thick and spreadable—even sliceable after being refrigerated! If you’re looking for cheese with a thinner consistency, add up to 2 more tbsp of oil and water.

Notes

  • Soak cashews overnight in water, or use hot water soak for 30 minutes when short on time.
  • Serve with crackers, tortilla chips, celery, or carrot sticks, garnished with fresh chives.
  • This cheese works as a dip or a creamy pasta sauce.
  • Keep refrigerated in an airtight container for up to 5 days.
