15 Minute Mustard Green Beans
Description
The recipe for 15 Minute Mustard Green Beans centers on fresh green beans sautéed first in butter and garlic to infuse rich savory notes. The addition of Dijon mustard and white vinegar brings a sharp acidity and depth, complemented by a hint of onion powder and salt. Adding broth and covering with a lid finishes cooking the beans by steaming them, which provides a tender but still crisp bite. This combination balances buttery, pungent, and bright flavors suited to complement hearty main courses.
This preparation results in green beans that are tender yet have a slight snap, with a zesty coating that makes their natural flavor stand out. The mustard and vinegar mixture does not overwhelm but adds complexity, while the stock enhances moistness without diluting the seasoning.
The dish pairs well with meats like chicken or pork, adding a lively vegetable side. Its relatively quick cooking time and simple ingredients make it practical for weekday meals.
Notes suggest flexibility in stock choice (vegetable, chicken, or beef) and recommend fresh green beans for best texture though whole frozen beans may be used if necessary.
Ingredients
- 1 lb green beans fresh, cleaned
- 3 cloves garlic minced
- 2 tablespoons butter salted
- 3 tablespoons Dijon mustard
- 3 tablespoons white vinegar
- 1/4 - 1/2 teaspoon salt
- 1/2 teaspoon onion powder
- 1/2 cup stock vegetable, chicken, or beef
Instructions
- Melt butter in a large sauté pan or cast iron skillet over medium heat.
- Sauté garlic in butter for 60-90 seconds - be sure it doesn't burn!
- Add cleaned fresh green beans to the pan and with tongs coat the beans with the butter and garlic.
- Add mustard, salt, and onion powder and with tongs coat green beans well. Then add vinegar and let cook for 3-4 minutes.
- Add stock and then cover pan with lid and let cook for 4-5 minutes.
- Remove lid, stir beans, and serve!
Notes
- Use fresh green beans when possible for best texture; if using frozen, select whole or haricot vert types.
- Any type of stock—vegetable, chicken, or beef—can be used without significantly changing the flavor.
