2 Ingredient Sugar Free Caramel Sauce (Low Carb, Vegan)

This sugar-free caramel sauce is made using just two ingredients: full-fat canned coconut milk and Sukrin Fibre syrup, a sugar alternative. The mixture is simmered until reduced by half, resulting in a thick, creamy sauce with a rich caramel flavor suitable for low-carb and vegan diets. It provides a sweet condiment without sugar, making it a useful topping for desserts or snacks.

Description

The 2 Ingredient Sugar Free Caramel Sauce relies on simmering coconut milk combined with a fiber syrup substitute for sugar until it thickens to a sauce consistency. The syrup's sugar alternatives gently caramelize during the slow reduction, creating a flavor profile reminiscent of traditional caramel without added sugars. This process requires attentive stirring to prevent burning and to achieve the correct thickness.

The final sauce is smooth, creamy, and versatile, able to be stored in an airtight container and cooled to further thicken. Its vegan and low-carb qualities come from the ingredients used, making it suitable for those with specific dietary needs or preferences.

Portion sizes of about one tablespoon are calculated for serving. The syrup ingredient may affect blood sugars in some individuals; thus, personal tolerance should be considered.

Ingredients

Servings
  • 400 g / ca 1 ⅔ cup coconut milk full fat, canned
  • 90 ml / 7 tbsp Sukrin Fibre syrup

Instructions

  1. Put coconut milk and fibre syrup into a small non stick pan and bring to the boil.
  2. Reduce the heat and let it reduce to half the amount, stirring frequently. This takes around 20-30 minutes.
  3. Pour your thickened syrup into an airtight container and let it cool down.

Notes

  • Calculate one serving as approximately one tablespoon of sauce.
  • In the US, use 4 tablespoons of Sukrin Fibre syrup per 1 cup of coconut milk for similar results.
  • The fibre syrup used may raise blood sugar in some, so diabetics should check the ingredient guidance carefully.
