2-minute toasted bread with olive oil and salt (the easiest side dish)
Description
2-minute toasted bread with olive oil and salt is made by toasting small slices of bread, which can vary from Italian styles like ciabatta or sourdough to everyday supermarket bread. After toasting, the slices are drizzled evenly with olive oil and sprinkled with freshly ground sea salt. Optionally, fresh herbs such as oregano, thyme, basil, or parsley can be added for extra aroma and flavor. The toast is served warm to enjoy the crisp texture and olive oil fragrance.
The texture is crisp yet tender inside, with the olive oil adding richness and moisture, and the salt providing a sharp contrast enhancing the bread’s natural flavor. The olive oil’s quality and freshness influence the taste, helping to elevate this minimalist preparation.
This side works well accompanying soups, casseroles, salads, or pasta dishes. It can be made with frozen bread slices toasted directly from the freezer and can also be turned into garlic bread by rubbing with a garlic clove prior to toasting. Leftover toast can be stored refrigerated and re-toasted gently to refresh.
Adjust bread size by slicing larger bread pieces in half. Adding paprika, chili flakes, or lemon juice provides flavor variety. Using fresh herbs complements the olive oil’s aroma.
Ingredients
- 8 lices bread [small slices of fresh bakery or Italian style bread (wholemeal, rye, sourdough, Turkish, Ciabatta, pitta... ) If you only have ordinary large slices of bread, use 4 and cut in two]
- 2 tablespoons olive oil (roughly- I don't usually measure the amount)
- salt to taste (freshly ground e.g. sea salt)
Instructions
- Toast the bread in a toaster or under the grill/broiler.
- Put the toast on a serving platter, then drizzle all over with the olive oil. Sprinkle over salt to taste.
- Scatter over a small handful of fresh herbs e.g. oregano, thyme, basil, parsley (optional). Serve while still warm.
Notes
- Frozen bread slices can be toasted directly without thawing.
- Various breads like sourdough, ciabatta, Turkish or Greek pitta can be used depending on preference.
- Large bread slices can be halved after toasting for manageable portions.
- Garlic bread variation: rub toasted bread with garlic clove before drizzling with oil and salt.
- Optional flavor additions include paprika, chili flakes, lemon juice, and fresh herbs.
- Store leftover toast in the refrigerator and re-toast gently to refresh.
