21 Club Burger

The 21 Club Burger is a ground sirloin patties mixture enhanced with finely chopped poached celery, chicken broth, breadcrumbs, Worcestershire sauce, and spices like nutmeg. The celery is gently simmered before mixing to soften its texture and mellow flavor. The patties are seared in butter until browned then finished in the oven, resulting in juicy burgers with a rich, savory profile. Served on hamburger buns, this recipe balances tender meat with subtle aromatic additions.

Description

The 21 Club Burger uses a blend of ground top sirloin with finely poached celery softened in chicken broth to add moisture and mild vegetal notes. Breadcrumbs, Worcestershire sauce, nutmeg, and seasoning combine for a nuanced flavor and a tender texture. The patty mixture is formed gently to avoid compacting, allowing a juicy interior after cooking.

The cooking method involves browning the burgers in butter until the exterior develops a rich amber color, then transferring the skillet to a 350°F oven to finish cooking to the desired doneness. This two-step method helps achieve a nicely crusted surface while keeping the inside moist. The finished patties are served on classic hamburger buns, making the burger straightforward but well-rounded.

Ingredients

Servings
  • 1/4 cup celery finely chopped
  • 1/4 cup chicken broth
  • 2 pounds top sirloin ground
  • 1/4 cup breadcrumbs
  • 1/2 teaspoon Worcestershire sauce
  • 1/4 teaspoon nutmeg
  • salt to taste
  • black pepper to taste, freshly ground
  • 3 tablespoons butter
  • 4 Hamburger Bun

Instructions

  1. Place the celery and chicken broth in a small saucepan over very low heat. Poach the celery for 20 minutes. Drain and let cool.
  2. In a mixing bowl, combine the poached celery with the ground beef, breadcrumbs, Worcestershire sauce, nutmeg, salt, and pepper. Mix well with your hands. Gently shape the mixture into 4 large patties, being careful not to compact the meat any more than necessary.
  3. Preheat the oven to 350°F.
  4. Heat the butter in a large, heavy skillet over medium heat until the butter is amber in color. Brown the burgers for 6 minutes on each side. Then transfer the skillet to the preheated oven for 6 to 8 minutes for medium rare, adding a few additional minutes if you prefer your burgers cooked beyond medium rare.
  5. Serve the cooked burger patties on the buns.
