3-Ingredient Apricot Bliss Balls
Description
3-Ingredient Apricot Bliss Balls combine the natural sweetness of dates and dried apricots with the creamy texture of cashews. Processing the ingredients together creates a uniform, sticky mixture that can be rolled into small spheres about 1.5 inches in diameter. Because no additional binders are used, the sticky and slightly oily feel helps them hold together.
These bliss balls offer a portable snack that can be stored in the refrigerator for several weeks or frozen for extended storage. They do not require baking, making them straightforward to prepare ahead. The blend of fruit and nuts delivers a chewy texture and a mild sweetness suitable for snacking or a pre-workout nibble.
To make the balls, ensure dates are pitted before adding to a food processor along with apricots and cashews. Pulsing and processing gradually breaks down the ingredients to a well-mixed consistency. Rolling by hand forms the shape, and refrigeration helps maintain firmness.
Ingredients
- 1 cup Medjool date pitted, about 1 dozen
- 1 cup dried apricot
- 1 cup cashews unsalted
Instructions
- Measure out your dates, apricots, and cashews. Make sure to pit the dates if they aren't already. Add everything to the bowl of a food processor.
- To begin with, pulse the mixture to break everything up. Process on high for about a minute at a time, pausing to scrape down the sizes of your bowl. After about 3-5 minutes of processing, you should have a pretty consistent mixture.
- Once you're satisfied with how small everything is blended, roll the mixture into 1.5" balls. You should yield around 16 balls.
- The balls will be quite sticky and feel oily. I like to keep them in the fridge in an enclosed container. These will keep for at least a few weeks in the fridge and can also be frozen.
Notes
- Ensure dates are pitted before blending to avoid unpleasant surprises.
- Store bliss balls in an airtight container in the refrigerator to keep them fresh for several weeks.
- They can also be frozen for longer storage; thaw before serving.
