3-Ingredient Chocolate Banana Cookies (Vegan)

These 3-Ingredient Chocolate Banana Cookies combine mashed ripe bananas, creamy peanut butter, and cocoa powder to create a simple, vegan cookie dough. The resulting cookies are gooey and chocolatey with a soft texture, baked into individual scoops that hold their shape with little spread, making for an easy treat requiring minimal preparation.

Description

The recipe starts by thoroughly mashing ripe bananas until mostly smooth, then mixing in creamy peanut butter until fully incorporated. Cocoa powder is gently folded in, first carefully to avoid powder spreading everywhere, then more vigorously once partially combined, resulting in a sticky dough.

The dough is spooned onto a parchment-lined baking sheet in scoops; it does not spread significantly during baking. Cookies bake at 350°F for about 15 to 18 minutes until set yet soft. After baking, they are cooled for 5 to 10 minutes before serving.

This cookie uses only three primary ingredients and is entirely plant-based without additional flour, sugar, or leavening. The texture is soft and chewy with a pronounced chocolate and peanut butter flavor balanced by natural banana sweetness. These cookies are a convenient and wholesome snack with minimal effort.

Ingredients

Servings
  • 3 banana mashed (about 1.5 cups, large, ripe
  • cup peanut butter creamy
  • cup cocoa powder

Optional Adds:

  • Pinch salt sea salt
  • ¼ tsp ground cinnamon

Instructions

  1. Preheat the oven to 350 degrees F and line a large baking sheet with parchment paper.
  2. Mash the bananas in a mixing bowl until most of the lumps are out - it’s okay to leave it somewhat chunky.
  3. Stir in the peanut butter vigorously until creamy and well-incorporated.
  4. Mix in the cacao powder. Note that it will want to fluff up like a flour explosion so stir gently at first and once it is somewhat mixed in, you can stir more vigorously.
  5. The dough will be very gooey and sticky - this is normal!
  6. Use two spoons to scoop the cookie dough onto the baking sheet, making whatever size cookies you like! The dough won’t spread very much during baking.
  7. Bake for 15 to 18 minutes, or until the cookies appear set up.
  8. Allow cookies to cool 5 to 10 minutes before eating.
