30 Minute Blueberry Chia Jam
Description
The recipe begins by heating fresh blueberries with honey and lemon juice over medium heat until the blueberries start to burst and release juice, about five minutes. Chia seeds are then stirred in and the mixture is brought to a boil before reducing to a simmer for two more minutes. As the jam cools to room temperature, the chia seeds swell and absorb liquid, naturally thickening the mixture. The result is a vibrant, lightly textured blueberry jam that relies on chia seeds for gelling rather than pectin or added sugars.
This jam can be used immediately as a spread or in recipes calling for fruit preserves. The preparation is quick and requires minimal ingredients, providing a fresh alternative to store-bought jams with added control over sweetness and texture.
Ingredients
- 2 cups blueberries washed, fresh
- 3 tablespoons honey
- 1 tablespoon lemon juice fresh
- 2 tablespoons chia seeds

- Remove from heat, and cool (to room temp) before using.
