30 Minute Dinner Rolls
Description
This recipe combines warm water, olive oil, active dry yeast, sugar, and salt, allowing the yeast to bloom before adding flour and an egg. Using a stand mixer with a dough hook simplifies kneading, producing a smooth, soft dough that forms into balls easily.
The shaped rolls rest briefly to start rising, then bake at 400°F for about 10 minutes, until tops are lightly golden. Brushing them with butter after baking adds flavor and sheen. The resulting rolls have a tender crumb with a soft crust and a subtle olive oil taste.
These dinner rolls complement a variety of dishes, from soups to roasted meats, providing fresh bread that can also be sliced for sandwiches. Their quick rise time allows fresh rolls within about half an hour, depending on kitchen temperature.
They keep at room temperature up to three days and can be frozen before baking; thaw and allow to rise before baking as usual. Olive oil can be substituted with lighter oils for a milder taste, and bread flour works well, though all-purpose flour is acceptable.
Ingredients
- 1 cup plus 2 tablespoons warm water not boiling hot - warm - around 114 degrees F
- 1/3 cup olive oil see notes
- 2 tablespoons active dry yeast
- 1/4 cup sugar granulated white
- 1 teaspoon salt
- 1 egg
- 3 1/2 cups bread flour all-purpose will also work
Instructions
- In the bowl of your stand mixer, combine the warm water, oil, yeast, and sugar.
- Allow to rest for 10 minutes (the yeast should bloom, and the mixture will look "puffy")
- Add 2 cups of the flour, the salt, and the egg into the yeast mixture using a dough hook, and mix.
- Add the remaining flour gradually.
- Let your mixer do the work and let it knead it all together until it becomes smooth ball. The dough will be fairly soft.
- Shape dough into 12 balls and place in a 9x13 baking dish.
- Let dough rest for 10 minutes, and heat your oven to 400F.
- Bake for 10 minutes or until tops are just golden brown.
- Remove from oven, and brush tops with butter.
- Ta-da!
- Devour.

- Rolls typically bake within 30 minutes from start to finish, but oven and room temperatures can affect rising and baking times; slightly longer baking may be needed.
- Store rolls covered at room temperature for up to 3 days to maintain freshness.
