Description

The recipe begins by heating avocado oil in a large skillet over medium-high heat. Diced yellow onions are added and cooked with sea salt under cover until they develop a near-caramelized brown color, intensifying their sweetness. Chopped baby bella mushrooms and minced garlic are then stirred in and cooked until softened and browned.

Ground beef is added next, initially browned on each side before being broken up and cooked fully. The dish is seasoned with dried oregano, coconut aminos or soy sauce if desired, and more sea salt. Baby spinach is stirred in and cooked just until wilted, adding freshness and color to the skillet.

The combination offers a savory mix with the umami richness of mushrooms and beef, balanced by aromatic oregano and spinach. It can be served on its own or with a side, and the optional ginger addition can add a warm spice.

  • 1 Tbsp avocado oil
  • 1 medium-sized yellow onion diced
  • 8 ounces baby bella mushroom chopped
  • 4 cloves garlic minced
  • 1 lb ground beef
  • 2 tsp oregano dried
  • 2 Tbsp coconut aminos or soy sauce, optional
  • 5 ounces baby spinach 2 big handfuls
  • 1/2 tsp salt to taste, sea salt

Instructions

  1. Add the avocado oil to a large skillet and heat to medium-high. Add the chopped onion and sprinkle liberally with sea salt. Cover the skillet and cook, stirring occasionally, until the onion begins to turn brown, about 8 to 10 minutes. We’re trying to get the onion to a near-caramelized state quickly in order to maximize its flavor potential.
  2. Stir in the chopped mushrooms and garlic and continue cooking until the mushrooms have softened and turn brown, about another 5 minutes. Move the veggies off to the side and add the ground beef. Allow it to brown for 2 to 3 minutes per side, then use a spatula to break it into smaller chunks and mix well. Continue cooking and stirring until the ground beef has cooked through and no pink is left.
  3. Add the oregano, coconut aminos or soy sauce (if adding), spinach, and sea salt and stir well. Cover the skillet and cook until the spinach has wilted, about 3 minutes. Taste the mixture for flavor and add more sea salt or a splash of liquid aminos or soy sauce to taste.
  4. Serve with your choice of side dishes, and enjoy!

Notes

  • Optionally include 1 tablespoon peeled, grated fresh ginger for added warmth and spice.
  • If soy sauce or coconut aminos are used, add salt at the end and taste to avoid over-salting.
