  • 1 Tbsp olive oil 15g
  • 1 lb. potato peeled and diced into ¼-inch cubes, I used Yukon golds
  • 1 lb. ground beef ~92% lean, lean
  • 1 yellow onion diced, small, 130g
  • 1 red bell pepper diced, 200g
  • 1 Tbsp Worcestershire sauce
  • 1 Tbsp Dijon mustard
  • 2 Tbsp Caramelized Onion Butter seasoning
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 green onions sliced
  • 1 cup cheddar cheese shredded, 112g
  • Optional for serving: sour cream, or plain Greek yogurt, taco sauce, hot sauce, ketchup, etc.

Instructions

  1. Add the oil to a large skillet and set to high heat. Once the oil is hot and shiny, reduce the heat to medium and add the potatoes. Cook, stirring frequently, for about 5 minutes.
  2. Then add the ground beef, onion, and bell pepper. Continue to cook, breaking the meat into small pieces as you go.
  3. Add the Worcestershire, dijon mustard, Caramelized Onion Butter seasoning, Italian seasoning and salt.
  4. Continue cooking and breaking up the beef, for about 6-8 more minutes or until the potatoes and onions are tender and the meat is fully cooked through.
  5. Taste and add salt and pepper as desired (I ended up adding an extra 1/4 tsp salt). Then top with sliced green onions.
  6. Add to a plate or bowl and top with 1/4 cup shredded cheese (per serving) to serve. Alternatively you could just go ahead and sprinkle the 1 cup of shredded cheese in the skillet.
  7. Serve along rice, cauliflower rice, cooked vegetables, over a bed of greens or as is. Top with sour cream (or Greek yogurt) for some creaminess. Add some hot sauce or ketchup if desired and enjoy!

Notes

  • Caramelized Onion Butter seasoning adds rich butter flavor but can be replaced by smoked paprika, garlic powder, and extra salt if unavailable.
  • Add additional salt as needed after tasting for balanced seasoning.
  • Serve with optional toppings like sour cream, Greek yogurt, hot sauce, or ketchup according to preference.
