30-Minute White Bean Turkey Chili
Description
The chili starts by browning lean ground turkey seasoned lightly with kosher salt. Onion, green bell peppers, garlic, and diced tomatoes with chilies are added to the pot along with cumin and oregano, cooking until the onions soften to build flavor around the meat. Then, white beans and chicken broth are incorporated and brought to a boil before simmering to meld the ingredients and thicken the chili.
Cheese is stirred in once cooking is complete, enriching the chili with creamy texture. Serving with lime wedges and chopped cilantro introduces a bright citrus note and herbal freshness that balance the savory, spiced base.
This chili can be enjoyed as a quick, protein-rich meal and adapted for a milder taste by adjusting the quantity of spicy tomatoes used.
For a less spicy chili, use one can of spiced diced tomatoes and one can of plain diced tomatoes according to the note.
Ingredients
- 3 TB olive oil
- 1 lb lean 90-95% ground turkey
- 1 large onion chopped
- 2 green bell pepper seeded and chopped
- 6 garlic minced, cloves
- 2 cans diced tomatoes with chilies 10 oz each, with juices
- 3 tsp cumin ground
- 2 tsp oregano dried
- 2 cans White beans 15.5 oz each, with juices
- 3 cups chicken broth good quality
- 1 ½ cups cheddar cheese or Monterey Jack cheese, shredded

Instructions
- In a large Dutch oven or heavy pot, heat 3 TB oil over medium high heat until hot. Add turkey and 1/8 tsp kosher salt, stirring and breaking up the ground meat until cooked through. Don't drain. Add onion, bell peppers, garlic, diced tomatoes with chilies and all the juices, cumin, and oregano. Stir often over medium high heat until onions are tender, 3-4 min.
- Stir in the white beans with juices and chicken broth; bring to a boil. Immediately reduce to medium heat and continue cooking and stirring occasionally, about 15 minutes. Add kosher salt to taste. Stir in cheese and serve with lime wedges and cilantro for garnish.
Notes
- For milder chili, substitute one can of diced tomatoes with chilies for a regular can without chilies.
