Description
This recipe combines ripe mashed bananas with eggs and full-fat coconut milk to create a moist base. Coconut flour adds body and structure, producing a thick batter that rests before cooking. Cooking in a preheated waffle iron with a light coating of oil yields waffles with a crisp exterior and tender interior.
The natural sweetness of bananas carries the flavor while optional additions such as cinnamon or vanilla can be mixed in to complement the banana notes. The waffles can be topped with various accompaniments to suit preference.
The batter can rest for at least 15 minutes or be prepared ahead and refrigerated, allowing the coconut flour to absorb moisture fully. Chocolate chips can also be sprinkled onto the batter before cooking for added variety.
Ingredients
- 4 banana mashed (1.25 to 1.5 cups mashed, ripe
- 1/3 cup coconut milk full-fat, canned
- 3 egg large
- 1/2 cup coconut flour
Optional Add-ins:
- 1 to 2 Tbsp honey
- 1/4 tsp salt sea salt
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
Instructions
- Mash the bananas in a mixing bowl. Add the eggs and coconut milk and whisk well until combined. Add the coconut flour (and cinnamon, vanilla extract if adding) and mix well. The batter will be thick. Allow batter to sit for at least 15 minutes (you can refrigerate it for up to 1 day ahead of time).
- Heat up your waffle iron and lightly spray it with cooking oil. Transfer the waffle batter to the waffle iron. If adding chocolate chips, sprinkle on top of batter before replacing the lid. Cook until golden-brown, crispy and cooked through.
- Top with your favorite toppings and enjoy!
