4-Ingredient Date Caramel

4-Ingredient Date Caramel blends pitted Medjool dates with almond milk, sea salt, and vanilla extract to create a smooth, naturally sweet caramel sauce. The dates provide a rich, soft base balanced by the creaminess of almond milk, while a touch of sea salt and vanilla rounds out the flavor. This versatile sauce can be used as a topping or dip, and the consistency can be adjusted by adding almond milk gradually.

Description

This date caramel sauce is made by blending pitted Medjool dates with unsweetened almond milk, vanilla extract, and sea salt in a high-powered blender or food processor. Starting with three-quarters of a cup of almond milk allows the ingredients to come together smoothly. Additional milk can be added in small amounts to adjust the sauce's thickness until it reaches the desired texture.

The resulting caramel has a natural sweetness from the dates without refined sugars, combined with the creamy, lightly nutty flavor of almond milk. Salt and vanilla extract enhance and balance the overall taste.

The sauce can be served immediately or stored in the refrigerator for later use. It is best made with fresh, soft Medjool dates for optimal smoothness and flavor. If dates are dry, soaking them before blending helps achieve a creamier texture. Adjustments to the quantity of dates may be necessary when using smaller or different types of dates to maintain desired thickness and sweetness.

Ingredients

Servings
  • 16 Medjool dates pitted*
  • 1 teaspoon salt sea salt
  • 1 teaspoon vanilla extract
  • ¾ -1 cup almond milk or other non-dairy milk, unsweetened

Instructions

  1. Add all ingredients (starting with ¾ cup almond milk) into a high powered blender or food processor and blend until mixture is smooth and there are no date chunks detectable.
  2. Add more almond milk, 1-2 Tablespoons at a time, if needed to help the blending process or to thin the caramel.
  3. Use immediately or store in the fridge for later.

Notes

  • Use soft Medjool dates for best results; soak dry or hard dates in water for 30 minutes before blending to soften.
  • Smaller dates like deglet noor require using more to achieve a similar thickness and sweetness.
