4 Ingredient Ice Cream Pie with Peanut Butter Krispie Crust
Description
The pie crust consists of mixing peanut butter and white corn syrup until smooth, then folding in crisped rice cereal. This mixture is pressed into a buttered 9-inch pie pan forming the base and sides. After filling the crust with softened ice cream, the pie is frozen for several hours or overnight to firm up.
The assembled pie combines the creaminess of ice cream with the crunchy, slightly sticky peanut butter crust. The corn syrup binds the cereal together, giving structure while adding a mild sweetness that complements the peanut flavor and ice cream. Allowing the pie to soften briefly in the refrigerator before slicing helps achieve clean pieces without excessive melting.
This dessert is straightforward, requiring no baking, making it convenient for warm days or quick sweet fixes. The limited ingredients create a harmonious combination of textures and flavors.
