40 Clove Garlic Chicken Recipe

Chicken with 40 Cloves of Garlic sounds complicated but it's easy enough to serve as a weeknight meal, and fancy enough to serve to guests!

Ingredients

  • 3 chicken leg quarters
  • 40 garlic peeled, cloves
  • 3 garlic whole heads
  • ½ cup extra virgin olive oil
  • orange juice juice of 1 orange
  • 1 teaspoon honey
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon thyme ground
  • 1 teaspoon rosemary dry leaves
  • 3 rosemary optional, fresh stems

Instructions

  1. Preheat oven 350℉.
  2. Chop off the top ½ inch of the whole garlic heads.
  3. In a sheet pan, add chicken legs, whole garlic heads, and 40 garlic cloves.
  4. In a bowl, add olive oil, juice of orange, thyme, dry rosemary, black pepper, salt, honey.
  5. Mix with a fork then drizzle mixture over chicken and garlic.
  6. Bake for 35-40 minutes until chicken is golden brown and cooked through (165℉ internally).
  7. Serve with fresh rosemary stems and enjoy!
