5-Ingredient Chocolate Peanut Butter No Bake Cookies

This recipe yields no-bake cookies combining peanut butter, honey, coconut oil, raw cacao powder, and crispy rice cereal. The warm mixture of melted peanut butter and honey blended with coconut oil and cacao powder coats the crispy cereal, resulting in firm, chocolate-flavored cookies that set in the freezer. These cookies have a chewy yet crispy texture and can be easily formed in various sizes.

Description

5-Ingredient Chocolate Peanut Butter No Bake Cookies blend peanut butter and honey gently warmed with coconut oil to create a creamy base. The addition of raw cacao powder infuses a deep chocolate flavor without baking. The crispy rice cereal is then folded in to add light, crunchy texture within the chocolate coating. After shaping the mixture into mounds on parchment-lined trays, the cookies are frozen until firm.

The process avoids heating the mixture too much, preserving the texture of the peanut butter and preventing bitterness from overcooked cacao powder. Freezing the cookies helps them hold their shape and makes them easy to store and serve chilled. These cookies are suitable as quick sweet treats without requiring an oven.

They can be enjoyed as dessert, snack, or lunchbox additions. Their simple ingredient list and no-bake method make them accessible and easy to prepare with common pantry staples.

Ingredients

Servings
  • 1 cup peanut butter
  • ½ cup honey
  • cup coconut oil
  • cup raw cacao powder
  • 4 cups crispy rice cereal
  • Pinch salt sea salt

Instructions

  1. Add the peanut butter, honey, and coconut oil to a large pot and heat over medium-low heat, stirring constantly until the mixture is well-combined and creamy. You don’t want the mixture to get too hot or boil - just warm it gently so that everything melts together.
  2. Stir in the cacao powder and sea salt well until the lumps of cacao powder are out.
  3. Gently fold in the crispy rice cereal. I use a rubber spatula for this to avoid any excess breakage.
  4. Line two large baking sheets with parchment paper, and drop lumps of cookie batter onto the sheet, forming any size cookies you like (I make about 15 large cookies, but they can easily be much smaller).
  5. Freeze the cookies for at least 1 hour, or until they are completely set up. After this point, you can transfer the cookies to the refrigerator or leave them in the freezer.
