5-Ingredient Spinach Parmesan Zucchini Noodles
Description
This recipe begins by spiralizing medium zucchinis into noodles. Garlic is first sautéed in melted butter in a hot skillet to release aroma and flavor, then the zucchini noodles and packed spinach are added and tossed briefly to combine and wilt the greens. The addition of freshly grated Parmesan cheese coats the noodles and spinach, imparting a salty richness.
The result is a light vegetable pasta alternative with a balance of textures — tender zucchini with a slight bite, softened spinach, and a creamy component from the cheese and butter. The seasoning is finished with salt and freshly ground black pepper to taste.
To avoid soggy noodles, the dish is removed from heat promptly once the spinach wilts and the cheese coats the noodles. This recipe can serve as a low-calorie side or light entrée.
Ingredients
- 3 zucchini medium
- 2 tablespoons butter
- 2 cloves garlic minced
- 2 cups spinach packed
- 1/4 cup Parmesan Cheese freshly grated
- salt to taste
- black pepper to taste
Instructions
- Spiralize the zucchini and set aside.
- Place a large skillet over medium-high heat. Melt the butter and add the garlic, cook for 1-2 minutes. Add in the zucchini noodles and spinach. Gently toss and cook until spinach leaves are wilted, about 2-3 minutes. Stir in 1/4 cup of the Parmesan cheese and toss until zucchini noodles are coated in the parmesan cheese. Season with salt and freshly ground black pepper, to taste.
- Remove from heat and serve.
- Note-don't overcook the zucchini noodles and spinach or they will get soggy.
