Description
The vinaigrette is quickly prepared by processing all ingredients together until smooth, using a mini food processor or hand blender. Ingredients include blueberries, olive oil, balsamic vinegar, Dijon mustard, honey, water, and optional salt and pepper to taste. The water quantity can be adjusted for desired thickness, resulting in either a pourable dressing or thicker dip consistency.
The dressing complements lightly bitter greens like spinach or kale, and enhances salads containing bacon, chicken, fruits such as peaches and mandarin oranges, cheeses including feta and blue cheese, avocado, and nuts like hazelnuts or pistachios.
