This 5-Minute Dill Pickle Chex Mix blends corn and rice Chex cereals, mini pretzels, and crushed pita chips coated with a mixture of canola oil, dill pickle juice, dried dill, and ranch seasoning. The mixture is microwaved briefly to meld flavors and crisp the snack mix, resulting in a crunchy, tangy, and savory treat with a pickle-inspired profile.

Description

The base combines various crunchy cereals and pretzels to provide diverse textures. The wet coating of oil, pickle juice, and dried dill evenly coats the dry mix for a distinctive tang and herbal note. The addition of dry ranch seasoning mix adds savory and creamy flavors. Cooking in the microwave while stirring each minute crisps the mix and helps flavors meld without overcooking.

After microwaving, the Chex mix is cooled on a baking sheet to finish crisping and maintain texture. It stores well in an airtight container for up to one week, making it convenient for snacking or parties. The recipe allows substituting bagel chips for pita chips if preferred.

  • 4 cups corn chex
  • 4 cups rice chex cereal
  • 2 cups pretzels mini
  • 2 cups Pita chips lightly crushed (bagel chips may be substituted)
  • ½ cup canola oil or vegetable oil
  • 5 tablespoons dill pickle juice
  • 2 tablespoons dill you can always start with 1 tablespoon and add more to taste, dried
  • ranch seasoning mix dry, 1-ounce packet, also salad dressing mix

Instructions

  1. To a very large microwave-safe bowl, add the corn Chex, rice Chex, pretzels, pita chips (I crush them in my hands), and stir to combine; set aside.
  2. To a glass measuring cup or small bowl, add the oil, pickle juice, dried dill, and stir to combine.
  3. Evenly pour the wet over the dry ingredients; stir well to combine.
  4. Evenly sprinkle the ranch mix; stir well to combine.
  5. Cook in the microwave on high power for 5 minutes. Stop every minute to stir well, scraping the sides of the bowl with a spatula if necessary.
  6. Turn mixture out onto a large baking sheet to cool. My mixture was quite dry after the five 1-minute cycles in the microwave but if yours isn’t, it will dry out as time passes if exposed to air.

Notes

  • Store the Chex mix in an airtight container to retain crispness for up to one week.
