5-Minute Flax Wheat Bread

This 5-Minute Flax Wheat Bread combines whole wheat flour and ground flaxseed to create a hearty dough that rises overnight. The dough develops a bubbly, slightly sticky texture, which then transforms into a crusty loaf after baking with steam in the oven. The method emphasizes a long, slow rise for fermentation, resulting in bread with good flavor and texture.

Description

The 5-Minute Flax Wheat Bread starts with mixing whole wheat flour, yeast, salt, ground flaxseed, and lukewarm water into a dough. After an overnight rise, the dough becomes bubbly and somewhat sticky. It is shaped into loaves and allowed a second rise before baking in a hot oven with steam, which helps develop a crisp crust. The bread features the nutty taste of flaxseed combined with the robust flavor of whole wheat.

Baking with steam from boiling water in a baking dish creates a moist oven climate, promoting good rise and a golden crust. The final bread is suitable for slicing and pairing with spreads or toppings, offering a wholesome alternative to white bread.

The recipe requires minimal active preparation time, relying on slow fermentation to build flavor. The dough can be formed into one or two loaves depending on preference, and baking times vary accordingly.

Ingredients

Servings
  • 3 cups whole wheat flour
  • 2 tsp yeast
  • 1 tsp salt
  • 1 cup Flaxseed ground
  • 1 1/2 cups water lukewarm

Instructions

  1. Sift the dry ingredients together in a large bowl to remove any lumps. Add in the water in small portions, stirring to combine with a spatula.
  2. Finish folding the dough by hand, or simply continue working it with a spatula. Place the dough into a large bowl, cover it with plastic wrap or a lid, and leave it on the counter to rise overnight.
  3. The next day, the dough should be bubbly, fluffy, and a little sticky. Flour your hands and form either one large or two smaller bread loaves. Place the loaves on a floured baking sheet, cover them with a towel, and let them rise for about an hour.
  4. Preheat the oven to 450°F and make sure you have two racks in place. Pour 2 cups of hot, boiled water into a deep baking dish. Place this baking dish on the lower rack (the water helps the bread to rise and crisp). Place the bread on the top racks. After 10 minutes, remove the dish with the water. Continue baking for another 20-30 minutes depending on the size of your bread loaves. Enjoy!
