5 Minute Microwave Keto Lemon Curd

This 5 Minute Microwave Keto Lemon Curd blends fresh lemon juice, zest, eggs, butter, and a keto-friendly sweetener, cooked briefly in the microwave with frequent whisking. The result is a smooth, tangy curd with a rich butter base, ideal for low-carb desserts or spreads. Its quick preparation suits those without stove access or in need of a swift lemon curd option.

Description

The 5 Minute Microwave Keto Lemon Curd uses fresh lemon juice and zest combined with egg yolks and whole eggs to create a creamy texture. The mixture is sweetened with Monk Fruit Sweetener or allulose, which supports a keto diet. Cooking in short bursts in the microwave with whisking ensures the curd thickens evenly without scrambling the eggs. The melted grass-fed, unsalted butter adds richness and a smooth finish. Cooling at room temperature helps it set before storage.

This lemon curd can be used as a spread, filling, or topping for keto-friendly baked goods, and it keeps well refrigerated for up to a week or frozen for longer storage. The recipe makes about 1 ½ cups, sufficient for multiple servings.

For those without microwaves, a traditional stovetop method is an alternative, maintaining the same ingredients and consistency.
