Description
The 5 Minute Microwave Keto Lemon Curd uses fresh lemon juice and zest combined with egg yolks and whole eggs to create a creamy texture. The mixture is sweetened with Monk Fruit Sweetener or allulose, which supports a keto diet. Cooking in short bursts in the microwave with whisking ensures the curd thickens evenly without scrambling the eggs. The melted grass-fed, unsalted butter adds richness and a smooth finish. Ingredients
- ½ cup lemon juice fresh
- ½ cup butter melted, grass-fed, unsalted
- ¾ cup Monk Fruit Sweetener or allulose
- 3 egg yolk
- 2 egg whole
- 2 tablespoons lemon zest
- ¼ teaspoon salt
Instructions
- Add the eggs into a large mixing bowl and whisk. Add in the sweetener and mix for 2 minutes or until well combined. Add the remaining ingredients and mix well. Cook in the microwave for 1 minutes, remove and whisk.
- Place back in the microwave to cook for another minute, remove and whisk. Repeat the process 3 more times, for a total of 5 minutes.
- Allow to cool at room temperature for 10-15 minutes, then store leftovers in an airtight jar the fridge for up to a week, or in the freezer.
