6-Ingredient Oatmeal Apple Pumpkin Bars

These oatmeal apple pumpkin bars blend pureed pumpkin, maple syrup, almond butter, oats, and warm pumpkin pie spice with diced Granny Smith apples. The baked bars have a moist, chewy texture enriched by the natural sweetness of pumpkin and apple, and a subtle hint of spice. They are convenient to make with minimal ingredients, ideal for a wholesome snack or breakfast option that can be stored chilled or frozen for later.

Description

6-Ingredient Oatmeal Apple Pumpkin Bars combine pumpkin puree, almond butter, and pure maple syrup as a moist base with rolled oats to create a hearty, chewy texture. The inclusion of pumpkin pie spice adds warmth while chopped tart apples provide slight crunch and freshness within the bars. Baking yields golden edges and a tender center that is easy to slice once cooled.

The flavors balance mild sweetness and autumn spices, and the almond butter adds richness without overpowering the natural pumpkin and apple taste. These bars are straightforward to prepare and use pantry staples for a wholesome homemade treat or quick breakfast.

They can be served on their own or with a spread of nut butter or yogurt. Storing in an airtight container refrigerated keeps them fresh about one week, and they also freeze well if wrapped properly, making them convenient for meal prep or snacks on the go.

Ingredients

Servings
  • 2/3 cup pumpkin pureed
  • ½ cup pure maple syrup
  • 3/4 cup almond butter unsweetened
  • 2 1/2 cups rolled oats
  • 1 tsp pumpkin pie spice
  • 1/2 tsp salt sea salt
  • 1 large apple peeled, cored and chopped, Granny Smith

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit and line an 8-inch square baking pan with parchment paper. If you don't have parchment paper, spray the baking dish with cooking spray or grease it with coconut oil.
  2. Combine the pureed pumpkin, pure maple syrup, and almond butter (the wet ingredients) in a large bowl and mix well until a thick, creamy wet mixture forms.
  3. Add the rolled oats, pumpkin pie spice and sea salt to the mixing bowl (the dry ingredients) and mix until a thick, sticky dough forms.
  4. Mix in the chopped apple until it is well-distributed throughout the dough.
  5. Spread the pumpkin apple oatmeal bar mixture into the prepared baking dish using a rubber spatula and bake for 30 to 35 minutes, or until the edges are golden brown and the center tests clean (I do 30 minutes).
  6. Allow the apple bars to cool to room temperature before slicing and serving.

Notes

  • Store bars in an airtight container in the refrigerator for up to one week to maintain freshness.
  • For longer storage, freeze the bars in a sealed freezer bag for up to three months.
