  • 6 radish chopped
  • ½ red pepper bell, deseeded and chopped
  • 4 spring onions scallions, sliced
  • cucumber deseeded and chopped, half, small size
  • 1 parsley handful, chopped
  • 1 Coriander chopped, handful
  • 1 rocket arugula, chopped, handful
  • Balsamic Vinaigrette Dressing

Instructions

  1. Cook quinoa according to packet instructions, let cool and transfer to the salad bowl.
  2. Add all the other ingredients (except the dressing) to the quinoa and mix.
  3. Add salad dressing to your taste, mix and serve alongside other summer goodies.
